QUICK AND EASY CHICKEN BURRITOS

TOTAL PREP. TIME: 10 min.
SERVINGS: 4 tortillas

INGREDIENTS:

INSTRUCTIONS:

1. 2 c. cooked Shredded Chicken (you can used canned chicken of choice)
2. 1/2 c. Mexican Cheese Blend or Mozzarella
3. 1 Avocado, diced
4. Large Tortillas
5. 1 tbsp. Oil
6. 2 tbsp. chopped Cilantro, if perferred
1. Mix shredded Chicken, Cilantro, & diced Avocado
2. Lay one tortilla flat on plate & add 1/4 of the mixture, form a roll, repeat process for all
3. Put 1 tbsp. Oil into heated pan. Placing all four tortillas in the pan, cooking for 2 min. on med.-high heat. Carefully flip to other side, cooking for another min. or until golden. Serve warm.

BBQ CHICKEN PIZZA

TOTAL PREP. TIME: 10 min.
SERVINGS: 4

INGREDIENTS:

INSTRUCTIONS:

1. 4 soft Pitas
2. 1/2 c. BBQ Sauce of choice
3. 2 tbsp. Red Onion, chopped
4. 1 c. Mozzarella cheese, shredded
5. 1 c. Tyson's pre-cooked grill chicken
1. Microwave chicken until thawed, cutting them into small pieces
2. Spread BBQ Sauce on pitas, putting 1/4 c. of Cheese on each Pita
3. Add onions (optional) & chicken on each Pita, placing them on microwavable plates
4. Microwave each Pita 1 min. or until cheese is melted
5. Cut into 4 slices & serve it up Hot!

EASY BEEF TACO SKILLET

TOTAL PREP. TIME: 10 min.
SERVINGS: 6

INGREDIENTS:

DIRECTIONS:

1. 1 pound lean ground beef or turkey 2. 1 small Red Onion, chopped
3. 1 can (15-1/4 oz.) whole Kernel Corn, drained
4. 1 pack of 10 Corn Tortillas (6 in.), cut into 1-inch pieces
5. 1 (8 oz.) Taco Sauce
6. 1-1/4 c. shredded Cheddar Cheese, divided
7. Hot Pepper Sauce, optional
1. In a lg. skillet, cook Beef or Turkey with Red Onion over med. heat until no longer pink; drain
2. Add drained Corn, Taco Sauce, &
1 c. Cheddar Cheese; heat through
3. Sprinkle with remaining Cheese
4. Add Hot Pepper (optional)

DUMP & BAKE ITALIAN MEATBALLS & RICE

TOTAL PREP. TIME: 10 min.
SERVINGS: 8

1. 1 bag of frozen Italian Meatballs, thawed
2. 1 lg. jar of Spaghetti Sauce (brand of your choice)
3. 1 c. Minute Rice
4. 1/2 c. of shredded Mozzarella Cheese - take out of frig. ahead of time to get room temp.
5. 1/4 c. grated Parmesan cheese
6. 3/4 c. Water
1. Preheat oven 400F
2. In a 13 in. x 9 in. baking dish, stir in Spaghetti Sauce, Water, & Minute Rice
3. Cover tightly with foil or lid
4. Bake 10 min., remove from oven to sprinkle on Mozzarella Cheese & Parmesan, either put foil/lid back on and let sit for 5 min. or put in oven again for 5 min. (don't shoot me, I know this goes 5 min. over the 10 but it's still such a quick delicious meal)

CHICKEN ALPHABET SOUP

TOTAL PREP. TIME: 10 min.
SERVINGS: 4-6

INGREDIENTS:

DIRECTIONS:

1. 4 - 6 cans of Alphabet Soup of choice
2. 2 cans of Carrots with Peas
3. 1 can of Chicken (your choice), no need to drain
4. Salt & Pepper to taste
5. 1 box of Crackers (optional)
1. Put all ingredients in a lg. pot; cook over med. heat until completely hot
2. Serve, don't forget the crackers

WAFFLES WITH CHILI & FIXINS'

TOTAL PREP. TIME: 10 min.
SERVINGS: 6

INGREDIENTS:

DIRECTIONS:

1. 1 box of Waffles (your choice of brand & flavor), toasted
2. 2 (30 oz.) cans of Chili (your choice)
3. Optional toppings: Sour Cream, Shredded Lettuce, Diced Tomatoes,
and/or Shredded Cheese
1. Pour cans of Chili into covered pot, heat until warmed or microwave in a microwaveable, covered dish (but not tightly, you don't want that stuff to explode), heating until warmed
2. Once waffle is toasted, top each one with Chili, Shredded Lettuce, Diced Tomatoes, Sour Cream, and Shredded Cheese
